| Is Buffalo really favored by 2 over Miami? Even as a Bills fan I
find that hard to fathom, considering that:
Bennet will not be 100%, and that's if he plays at all
Bruce Smith is definitely sore
The game is in Miami, and thus on grass
About five other important Bills are banged up
I realize that the Bills won in Miami earlier this year, but I
forsee a very tough game this week.

| Yep, I'm back in NUO. Just bought a house in Merrimack, NH.
It is somewhat ironic that the Bills could be the first team to
play in three consectutive superbowls. Actually, when the Eagles
and Bills were both so hot around week 5, I had visions of
Buffalo losing to 4 NFC East teams in 4 years: NY, Washington,
Philly, and Dallas. Still could happen, if you switch the last
two.

| Its not suprising that the Bills are favored since they beat Mihamy
11 of the last 13 meetings. I hope Mihamy wins, but for some reason I
don't thin they will.
I think that Either of the AFC teams can beat the cowboys in the SB,
but not SF.

| There are four key things to good wings.
1. Crispness (not dried out, just crisp)
2. Sauce
3. Celery and blue cheese
4. Beer.
1. Crispness - The only way to be able to cook more than 10 wings at a
time and get them crisp on the outside is to get a big industrial
sized deep fryer. Since most of us don't, you need to cook between
5 and 10 in your small "fry-boy". The key when cooking them is to
have the oil hot (375-400) and cook them for about 10 minutes. The
reason you can't throw too many in the oil at once is because it
will drop the temperature down too low. By the time it gets back
up to 375, the wing is cooked but not cripsy. Further cooking to
get crispness will only dry the meat out. A good thing to look for
when checking for doneness is that the wings will have been floating
for a few minutes.
2. The Sauce - You have to trust me on this. There is only one recipe
where you will consistently get real Buffalo-style flavor. It's so
simple you will doubt it. Durkee Red Hot (Cayenne sauce in most
supermarkets) and dilute it with melted butter to you heat level.
That's it! Place the sauce in a tupperware container, throw in the
wings, put the cover on,shake it up, pull out with tongs and you're
done. be careful because the heat from the wings will create a lot
of steam. The steam will do two things. 1) Blow the top off when
you're shaking it and 2) blind you with a cayenne steam bath when
you open it. But hey! that's the fun of it.
I have tasted wings from all over the country. I have also tasted
people's home concoctions. The more ingredients you add to the
sauce, the less it will taste like true Buffalo wings. It's
axiomatic.
Breaded or Bar-b-q flavored wings may taste good but they are not
Buffalo-style. It's like saying Dominoes is real pizza.
3. Celery and blue cheese - Celery is celery, but I've found that
Wish-bone or Maries are the best blue cheeses.
4. Beer - I can't preach what beer is good here. As long as it's beer
it should do the trick. However, if you want the true Buffalo
experience, you should get a case of Gennesee Cream Ale pounders (16
oz). That will guarantee extending the Buffalo experience well into
the next day on the john.

Your note is exactly correct, and does the best job I've ever
seen of explaining exactly how do make true wings. And hey -
I've even been to the Anchor Bar for the *REAL* real thing,
along with growing up right outside Buffalo.
You wouldn't believe how many baked, breaded, and barbecued
things are being passed off as Buffalo wings. They may be good,
but they just aren't Buffalo wings. Period.

I was at the Anchor, too, on one 4th of July and got hellaciously
drunk during the process of downing Buffalo wings and raw oysters.
I got one question, though-- I didn't eat the wings with celery or
the blue cheese. Is this optional? Could I have been thrown out of
the place for such an indiscretion?

| Celery and Blue (bleu) cheese are definitely optional. In fact,
if the wings are hot engouh, you're better off not pausing
between wings to eat celery. It always seems to get hotter when
you stop eating and drinking.

| A way to tell a non-Buffalonian who is eating wings...
They only eat the drumstick pieces. If you're good, and it takes a lot
of practice, one can take one of the two-boned wings, grab the knuckle
(where the bones meet) put it in your mounth, pull it out and have all
the meat off. It really makes you look like you know what you're
doing. I tend to avoid the drumstick pieces cuz you have to nibble
around it like corn on the cob whilst the good wings are being gobbled
up.
Celery and blue cheese should be served with wings, but while you're
pigging out, you should concentrate on the wings.

| I wouldn't be a fan if I didn't enter a few comments about the game
yesterday...
I was worried when Kelly threw his first interception - I thought
back to the first Miami-BUffalo game, and had pictures of turnovers
dancing in my head. Luckily it was Miami that got bitten harder by
turnovers, and the BIlls finally capitalized.
The defense has simply been outstanding for the last 2.5 games,
especially the defensive line. They have pressured Moon, O'Donnell,
and now Marino (4 sacks) without having to resort to many corner and
safety blitzes. (And, as an aside, I believe that the poor first
half against the Oilers was duje in large part to the 6-DB
alignment. When they went back to their normal D, they did much
better - just goes to show that you want your best players out there
at all times.)
The offense was decent if nto spectacular. The extra week off will
be a big help for the Bills, so that Thurman will be at full speed
and the rest of the recently-returned players will have more
practice time to be ready. The O-line has been playing well, and will
have to be in top form against the Cowboys.
My highest accolades go to the coaches. The game plan was well
designed and the play calling was right on target, especially all of
the screen passes and short stuff to exploit the Miami defensive
tendencies. Had they called that type of game in the superbowl
against the Giants, I believe that the Bills would have won (not a
prayer last year, though).
So now it's on to Pasadena against the Cowboys. Both teams have
outstanding RB's who are excellent receivers, strong passing games,
and very god defenses. I would have to give Dallas the edge in
defense, rate the teams about even in offense, but I give all the
intangibles to Buffalo. How will this work out? I dont know - if the
Bills can stop the running game as they have in the past three
weeks, then they will win. If the Bills can hold off the Dallas pass
rush, Buffalo will win. But anybody can figure that out. Either way
I think that it will be an exciting game, with the score something
like 27-24.

This was a no-win situation for me. ONly reason I'd want the
Dolphins to win would be for Shula the genius to lose his
record 5th Superbowl.
I'll have to jump on the Bills bandwagon, because I loathe Dallas,
their fans, and Jimmy Johnson. I couldn't root for Jimmy
=
Johnson if he was arm wrassling Jeffrey Damher.

| I personally can't stand Jimmy Johnson and Jerry Jones - I find them
obnoxious, and can't stand what Johnson did at the University of
Miami (the way he let his players act, especially).
But I have to hand it to both these guys for going from 1-15 to the
Superbowl in what, 3 years? Johnson is an excellent coach, and they
have run their organization very well (I loved the way they handled
the draft).
Both my personal dislike and and the amount of respect I have for
their professional abilities will make it sweeter - *if* the BIlls
win.

As I understand it, the Bills are re-negotiating with several current
players who will soon be free agents. I guess that they want to
prevent losses to free agency like they had this year. Jim Kelly
wants to get in on this act.

Seems like you answered your own question.
Sign them before free agency, that way they are bound to the team
via contract (for whatever those are worth).
Kelly is a good QB, but he's only as consistent as the rest of the
team. Maybe they should sign Riech (sp?) for more? The Bills are
going to go downhill this year IMO. 3 straight SB losses can kill ya
emotionally, though they are deeper in talent than most other AFC
teams, including bench.

The ultimate Chile Chicken Cheese dip... guaranteed to please.
Take 1 Large Can of Tomatoes, crush and add 1 tablespoon of pepper and
1/2 teaspoon (2-3 clove parts minced) in a pot and simmer.
Add 1 small can chopped green chiles and 2 tbsp Jalepenos.
Simmer 20-30 min.
Add 1 can (undiluted) Cream of Chicken Soup, slowly, while stirring.
Add 1 pound of grated cheddar cheese. Simmer until cheese is mostly
melted.
Wimps can reduce Pepper and Jalepenos.
Studs add more Japs.
I make this every Super Bowl - it rarely lasts past halftime.

| I have one beef with note .10
I like my wings baked, not fried. Get a baking dish (like you'd
bake a cake in, not a flat pan) and a rack that fits in it. Put
the wings on the rack so's the drippings fall below and you're
not too greasy. Bake on 350 until golden (20-25 min?).

They have a few versions out, but they don't clearly distinguish
on the label the differences.

A buddy of mine has a bar and he keeps a variety of hot sauces for people
to try. He'll get some guy bragging about eat hot stuff and my buddy will
offer him a taste of Dave's Insanity on a toothpick. It's usually good
for the immediate purchase of a couple of beers.
It's actualy humorous watching the macho guys trying to tough it out with
the usual results being failure to be able to talk and a steady flow of
tears.

He makes his own salsa. Not for the faint of heart.
One night he brought a bag of mixed peppers into the
Legion for someone. The bartender at the time, a
poster child for Air Heads, says, "That orange one
looks good. Let me try it."
The grower slices a very small sliver of it. The
Bimbette complains that he's being a chauvinist.
The grower gladly hands over the entire habanero,
all the while trying to talk her out of plopping
the whole thing into her mouth. No luck.
The dance performed afterwards was memorable to
say the least.

Shown below is a rating scale for the heat of hot peppers, useful as an
index for the desired amount of self-abuse. It was ostensibly
developed at Texas A&M University, and appears in the Feb 93 issue of
Organic Gardening magazine. Its called the Scoville rating:

My worsted incident came trying a jalapeno that had been pickled.
Thinking that it had lost some its heat units, I chomped hard. The
onliest thing I had to drink was room temperature single malt scotch
which I tried. I immediately began foaming at the mouth. Luckily it was
winter so I just went out side to cool down.

| What is even more decieving to me is the color thing.
Typically the milder color ones (orange, yellow or
green) are hotter than the red ones. Goes against
everything you would expect.

Habanero/Scotch Bonnet. I always hear that one or the other
is hotter. I thought they were both really kind of the same
thing.
My indoor batch of habaneros (tough outside in NE) is just
starting to get ripe!
Dave's also makes a Dave's Insanity Speical reserve, claimed
to be twice as hot (impossible) that comes in a wooden box
(coffin) with yellow caution tape wrapped around it. Signed
and numbered by Dave.

Two *almost certain* ways to kill a good show:
1- change writers (which Picket Fences did this year)
2- move it to another time slot
Not surprising, the best show of the season was a couple of weeks ago
(the Pope's visit to Rome, WI), when the original writer came back for
one show.

Thankfully, the Bills finally put Alex Van Pelt in as the backup QB
instead of Todd Collins.
I always thought he should have been #2. Not that I had much to go
on, but he definitely looked better in preseason, and I have a sneaking
suspicion this guy might make it eventually.

Nice win by the Bills the other day!
Even the Pats showed that you can run agains Pittsburgh in Pittsburgh,
so I don't think a Bills win there is out of the question.
If they do win, I think they are golden. I know its a little too hip
to count out KC, but I do count them out, honestly. I, in fact, think
the Colts may beat them.
An all AFC East Championship would be cool...

No. Their defense is still good enough to win in the weak AFC.
While I don't see them winning the division (especially if Miami gets
a disciplinarian who will weed out the malcontents), they certainly
should be expected to make the wild card round again next year.

The AFC East is week. Miami is at best in a state of flux. Who know's
which New England team will show. Indianapolis may be the class of the
division and the Jets are definitely the doormat.
Buffalo will eventually have to bite the bullet and it looks like they've
started. Barring major acquisitions, Van Pelt is likely to take over at
QB and Derrick Holmes looks like tomorrow's RB. Neither Kelly nor Thomas
have many years left.
Paup will help stabilize the D but Bruce Smith is no spring chicken,
neither.
So what you're looking at is at best in and out of the playoffs afore it
gets to the conferences.

I don't know about *expected*. AT BEST, the Bills might be able to
maintain their current level of performance...ie: tread water, run in place.
That may not be good enough to get them in the playoffs next year.
As mentioned, Indianapolis appears to be legit. Miami with Johnson is
AT LEAST Buffalo's equal, and most likely better. Will Parcells' team
have another poor/under-achieving season ? And that's just the East.
In the Central, Pittsburgh will remain good, as long as they re-sign
O'Donnell. Cincinnati is on the rise, should have a winning record
next year and contend for a WC spot.
Out West, EVERYONE is a playoff contender. Erickson looks to have
Seattle headed in the right direction. Shanahan will be in his 2nd
year, after having one of the NFL's best offenses in his 1st. Beathard
will always have talent on SD. KC is legit. Surprisingly, Oakland may
be the question-mark of the bunch.

Miami has some problems that Johnson may not be able to fix in just a
year. His main challenge is to simultaneously rebuild and compete.
Miami won enough to end up below the middle of the pack in the draft.
While there's a lot of the "stars" on thised years version will not be
re-signed, there's no Herschel Walker to trade except for Marino which
Johnson may resort to but which will really set 'em back.

It all depends on how Johnson can get some revenge against the
Cowboys. Does he want to stay in the NFC with Tampa Bay. Or go
to the AFC with the Dolphins. When does he want to bounce the Boys
from the playoffs. In a NFC championship game or the Super Bowl?
Or does he want to prove how good of coach he is, by taking a
perenial loser in Tampa Bay and bring them to the playoffs.

| Johnson won't take the Tampa Bay job without a commitment from the owner
to keep 'em in Florida. Apparently, the owner won't do that feeling that

So? Drew Bledsoe's not mobile, either, yet I keep hearing he's
gonna take the Pats to an NFL championship.
Not that you were saying anything like this but it reminds me of
something that irks me.
I don't understand why physical handicaps that impair performance
are not acceptable, but the same symptoms are tolerated if due to
other causes.
For instance, Flutie gets railed for tipped balls because he is too
short, while other "respected" QB's get excused for the same symptom
because "they throw sidearm." Same with mobility - if we accept
immobile QB's for their other assets, why can't they be great immobile
QB's because they're chunky :^)
