|  |     Went to an interesting wedding reception where they served Buffalo
    Burgers.  They hand ground the buffalo meat themselves and then grilled
    the meat.  I was hesitant, curious, surprised and full! 8*)

|  |     We cook buffalo roasts and steaks just like cow, (in the case of steaks
    very rare.)  the thing to remember is the meat is very lean (like
    non-feedlot fed beef) and you have to watch about overcooking it or you
    will wind up with shoe leather.
    
    A favorit for a round roast is soaking it in teriyaki and then roasting
    it in the weber over applesmoke.  Server rare-med rare.
