    This may sound "gross", but I'm really curious.
    
    The "Joy of Cooking" has a recipe for Woodchuck.  We recently caught
    one, which we set free, but were wondering if it were some kind of 
    delicacy.  I wouldn't feel terrible about killing it if it were for 
    food (we know they eat well, as two (?) of them devoured 50% of our
    1600 sq. ft. garden). 
    
    Has anyone out there ever cooked a woodchuck?  If so, what was the
    recipe?  Will a butcher "dress" it for you?

            I saw a show on TV once where they had a chef from L.L.Bean
    who was cooking different types of game and he stated that young
    woodchucks are very tastefull.

    Woodchuck along with most other small game taste similar to chicken. 
    When any of them get old they become tough (2 or more years) and have a
    rather gammie.... taste.
    
    I don't know if a butcher would dress them or not.  I guess if you find
    one who specializes in dressing game for folks or any hunter they might
    do it for you.  I have had woodchuck done on a spit over a campfire and
    it was great.

          My grandmother used to offer to cook one for me if I ever
        wanted to try it. When she first offered I asked where did
        she ever learn such a thing, her reply was that if you rasied
        9 kids during the depression that woodchuck became a good and
        inexpensive meal. The reason she was offering was that she
        liked the flavor and would like to have some again. She told me
        that you have to be very carful dressing it out due to some
        glands that are located under the legs, if you hit one it will
        taint the meat. She died before I was able to get one for her,
        I will always be curious as to what I missed out on.
