Just happens that I have his latest book Louisiana Homegrown Cookin
    from the library.

      1/2 C fresh halved strawberries
        1 5 to 8 lb smoked ham
        1 C strawberry wine
        1 C water
        1 tbsp Creole mustard

Preheat oven to 350F. Place the ham in a large roaster and arrange the
strawberries on top. Mix the wine, water, and creole mustard together,
then pour over the top of the ham, and let it drip down the sides.
Bake 1 hour, basting every 20 min. After the ham is baked, slice and
serve topped with a Strawberry Sauce.

    Strawberry Sauce

1 pt fresh whole strawberries, washed, stemmed and drained
      1/2 C sugar
        1 tsp ground cinnamon
      1/2 C water
1/2 C strawberry wine or liqueur

In a medium saucepan, mix all the ingredients together and cook
covered over low heat until thickened, at least 3 hrs, stirring
occasionally. If you wish, mash the berries with a spoon. This can be
stored in the refrigerator for several weeks.
