| These recipes are particularly good for cukes that are showing signs of drying
in the middle. When you peel them, you can leave stripes of peel on for
decoration. You can also score them lengthwise with a fork before slicing to
give a serrated look.
Sauteed cukes & dill - excellent with grilled salmon!
Peel 'em, and cut 'em in half lengthwise. Then scoop out the seeds and slice
them. In a sautee pan, heat butter and a touch of olive oil add some fresh
minced dill and the sliced cukes, and toss for a few minutes, till warmed
thru.
Stuffed cukes -
For party finger food, peel cukes and cut them into 3 inch (more or less)
sections. Remove the seeds using an apple corer (the length of the corer
dictates whether or not you can start with 3" sections or more or less) and
stuff with deviled ham, or egg salad, or anything else about that thickness.
Slice into 1 inch sections and serve.

I just came back from lunch at a place called Pepper's in
Northborough. One of the side dishes they served was a
cucumber and dill in sour cream - it was fantastic!
I'm gonna stop at the store today and whip up a batch for
myself!!

These consist of a generous portion of cuke slices, mayonaise and of course
the bread.....

| I frequently use cucumbers in place of zucchini or summer squash
in a pasta stir-fry number I whip up. I sautee garlic and onions
in olive oil, add carrots (slice paper thin on my hand grater) and
a little bit of red bell pepper, then toss in sliced cucumbers and
cooked linguini and just heat through. I like the cukes to stay
crunchy, so they go in last. SOmetimes I add soy sauce and honey
to make it a little on the Oriental side, or just sprinkle with
freshly grated romano and a pat of butter. Oh, yeah. If not going
the Oriental route, fresh basil is a must!

Try this:
Thinly sliced, peeled cucumbers
Cider vinegar cut with a bit of sugar
Fresh chopped dill
Simple, light, and delicious.

| Thai cucumber usually has a yogurt & mint dressing on it. I don't have
a recipe for it, but you could mix it to taste.

Thai Cucumber Sauce (MAN JIM TANG QUA)
~~~~~~~~~~~~~~~~~~~
[This variety is traditionally served with Sate]
1/4 cup granulated sugar
1/2 cup white vinegar
1/4 cup boiling water
1/4 teaspoon salt
1 teaspoon ground chili paste
1/2 pound (1 medium) cucumber
Corriander springs to taste
2 teaspoons ground roasted unslated peanuts (optional)
1. Combine all ingredients except cucumbers, peanuts and coriander.
Stir until sugar is dissolved. Allow mixture to return to room
temperature.
2. Peel the cucumber and slice crosswise into 1/8 inch thick slices.
Chop the coriander springs coarsely.
3. Add the cucumber slices, peanuts, and coriander leaves to the
liquid mixture. Do not allow to sit more than 2 hours or cucmbers
and peanuts will become soggy.
[Makes about 1-3/4 cups]

tomatoes and green pepper, season with some curry powder. Use as a

Remember to remove as much excess moisture from cucumbers first and if
you really want a thick raita use Greek yogurt.
To remove moisture from cucumbers: Grate cucumbers. After, place in a
cheese cloth lined colander (or in a coffee filter!) and leave for a
half hour or so. Before removing wrap tightly and give an additional
squeeze. Now proceed as in .18. I always add freshly chopped mint to
mine as well.
