775.0. "eggs only mc muffin?" by VIDEO::TEBAY (Natural phenomena invented to order) Tue Oct 20 1987 16:32

Does anyone knowhow McDonalds makes the eggs for the
    egg mcmuffins?
I love the eggs-yolk done white done but not burned.
I have tried egg rings and that helps but the white still
gets overdone. When I tried putting the yolk in,let it cook,
and adding the white but still can't get that perfection
    they can.

    Anyone know?

I used to work at McDonalds long long ago. They do not microwave
their eggs. They use fresh eggs and a ring. They break the egg
yolk after it is put into the ring. Maybe you are using
too large of an egg, it might not get a chance to cook through
before the whites are over done.

.2 forgot to mention that they cook the eggs (in the rings) on the
grill (the same grill they use for hamburgers later on in the day).

I've seen egg rings in cooking shops (Joy of Cooking, etc.).

775.4Breaking the yolk as wellHPSVAX::MANDALINCITue Oct 27 1987 16:118
When I used to work in the "snack bar" at college, for their breakfast
sandwich they didn't use the rings but would put the egg on the
grill and give the yolk a break as well with the corner of the spatula.
This would break the casing around the yolk a let it flow just a
little. Obviously, they are not as visually appealing as using an
egg ring - they are just well cooked fried eggs (but seemed to cook
faster and more even with the hit yolk) Try it in the rings - it
may be the trick we were all looking for.

We call our version of Egg MacMuffin "Mike MacMuffins" after my
husband who likes to make them. I use a heavy egg ring so there
are no leaks. Crack one egg at a time into a bowl, mix it up so it
is all yellow, pour it into the egg ring and allow it to set. After
it has set, run a knife around the inner edge of the egg ring and
remove it. Flip the egg over. Perfect size for an english muffin.
We serve this whith taylor ham (pork roll) and cheese on top.
