| The Banana Stuffed French Toast available at Tanagora Terrace in
the Polynesian Village has been mentioned in several notes. I liked it
so much, I asked for the recipe.
Note: This stuff is so sweet, that if you put maple syrup on top
of it, you can fly from the Poly to the Magic Kingdom without the
monorail, just from the sugar buzz.
BANANA STUFFED FRENCH TOAST
Ingredients Quantity
----------- --------
Bread, Sourdough 2 Slices, 1" thick
Banana, Fresh 1 Each
Sugar, Granulated 1/3 cup
Eggs, Whole Fresh 2 Each
Milk, Homogenized 1/2 cup
Cinnamon, Ground 1 tsp.
Vanilla Extract 1 tsp.
Oil or Shortening for frying
Method

Cut bread loaf into 1 inch thick slices. Cut a 2 inch pocket into
one side of the sliced bread. Set aside. Split one medium sized
banana in half; then cut across. Remove peeling and stuff 2 pieces
in each pocket of bread. Set aside. Mix sugar and cinnamon. Set
aside. Mix eggs, milk, and vanilla extract until well blended.
Dip stuffed bread into batter to cover entire surface. Fry in 35O�
oil for about 1 1/2 to 2 minutes on each side. Remove from oil.
Let drain then roll in sugar-cinnamon mixture, covering all sides.
Serve hot. Serve with whipped butter and warmed maple syrup.

| I had bought the Disney Cookbook with Mickey on the Cover Cooking
around the World (or something similar to that, forget the actual name
at the moment) at the Disney store in the Burlington mall as a
christmas present for the wife (who am I kidding, I really wanted her
to bake me the macadamia-nut/maple syrup pies, Black Forest cake etc
;^)). A lot of your favorite recipes can be found in there like the
Monte Cristo - which reminds me I need to by the deep fryer as a
present to the wife.

| Below you will find the recipe for the Monte Cristo Sandwich, which is
serve at the Town Square Cafe (MK) and Verandah Restaurant (WDW
Shopping Village) at Walt Disney World. This is the recipe found on
page 54,55 of the 'Cooking with Mickey around our world' which is
available at WDW as well as the Disney Stores for about $12, which I
had mentioned in 42.2. (note that we had substituted Maple Syrup for
the Currant Jelly Sauce and Fruit Compote, and it still taste great)
Claude
Monte Cristo Sandwich
Monte Cristo sandwhich is served with a fruit compote (a mixture of
fresh and canned fruit) and currant jelly sauce. First prepare these
two, then make the batter. While chilling, put together the
sandwhiches. When the sandwhiches are fried, then complete service is
ready.
Currant Jelly Sauce
2/3 cup currant jelly 1 Tablespoon half and half
1 tablespoon water
Combine jelly, water and half and half in blender and mix until smooth.
Makes about 3/4 cup.
Fruit Compote
Combine your favorite fresh and canned fruits and chill well. Plan 1/2
cup per person.
Batter
2/3 cup water 1/8 teaspoon yellow food coloring
1 small egg 2/3 cup all-purpose floor
1/2 teaspoon salt 1 3/4 teaspoons baking powder
1/8 teaspoon white pepper
Place water, egg, salt, pepper and food coloring in a bowl and using an
electric mixer, mix well at low speed. add flour and baking powder and
mix until batter is smooth. Chill. Makes enough for 4 sandwiches.
Sandwiches
8 slices white bread 4 slices (1 ounce ea) Pullman Ham
4 slices (1 ounce ea) Turkey Roll 4 slices (1 ounce ea) Swiss cheese
Make 4 sandwhiches, putting cheese between ham and turkey. Cut into
fourths and put a toothpick through each quarter.
Final Preparation
Soybean or Vegetable oil for Fruit compote
frying Currant jelly sauce
Confectioners' sugar
Heat about 6 inches of oil to 340 F in a fryer (note we used a Presto
Fry Daddy with no problem.
Dip sandwiches in batter to cover all surfaces. Deep fry sandwiches
until golden brown, turning as needed. Remove from oil, take out
toothpicks, sprinkle sandwiches with confectioners' sugar. Serve with
fruit compote and currant jelly sauce

| As of a month ago they were still selling frozen bananas. I
remember seeing them sold from pushcarts. I'm sure you'll be
able to get your fill of them! I kept meaning to try them, but
never did get around to it.

| Feb. 91 Issue of GOURMET has the following Churros recipe:
1/2 cup milk
2 tablespoons granulated sugar
1 stick (1/2 cup) unsalted butter
1 cup all-purpose flour
4 large eggs
1 teaspoon vanilla
vegetable oil for deep-frying
cinnamon sugar (1 cup sugar mixed with 2 teaspoons cinnamon)
In a heavy saucepan combine the milk, 1/2 cup water, the sugar, and the
butter, heat until butter melts, and bring it to a boil. Add flour all
at once and beat vigorously with a wooden spoon until mixture is
smooth. Continue to beat over moderate heat for 2 minutes, remove from
heat, and transfer mixture to a bowl. With an electric mixer, beat in
eggs 1 at a time, beating well after each addition. Beat in vanilla.
Transfer dough to a pastry bag fitted with a 1/2-inch star tip.
Heat 2 inches of oil until it reaches 375 degrees F. Pipe 4-inch
lengths of the dough into the oil and fry, turning frequently, for 2
to 3 minutes or until they are golden brown. Drain churros on paper
towels and toss with cinnamon sugar while they're still warm.
Makes 24 churros.

| Back in 91 I went to the 50's style Cafe in MGM. I'm not even sure if
its still here as I haven't done much reading since then because I
hates to get depressed thinking about not being to get back.
Anyways... they made a chicken salad that I was never able to duplicate
or find a recipe for.
It was Aunt Selma's Chicken salad and it was filled with Nuts, Raisons
and Pineapple. Does anyone have their recipe or do I have to wait till
1997 when I hope to go back to try it? :)
