I've sampled the sushi here, and while it's good..real good, it
still is behind that which is offered at the Sakura in Worcester.

I'm a bit confused here. I eat and like sushi to so could you expand
your statement about why the sushi is better in the other place? I
mean, raw fish is raw fish, right?

| Raw fish is raw fish, but...
How fresh is it, and who chose it for sushi instead of sending it to
some other kind of resto?
How good is the nori, and has it been stored properly?
How good is the rice? How well has it been cooked, and what
proportions of vinegar and mirin were used?
How skillfully, and how generously, does the chef cut pieces of fish?
How skillfully does he roll maki, and how prettily does he form the
rice for nigiri? Does he roll some of his maki varieties with the rice
on the outside? Does he use sesame seeds or sea-urchin roe on some of
the rice-outside varieties? Can he make a good te-maki?
How much wasabi does he use on his nigiri?
How good is the soy sauce, and is it shoyu or tamari?
How good, and how generously supplied, is the pickled ginger?

| While the sushi I've had here was quite good, the last time I went, it
arrived as dessert. Not recommended if you're in any kind of a hurry.

Freshness was the ticket here. Check out the Sakura and you'll see
exactly what I mean.

Peter... you of all people.
Let's just say 'a 50 watt Amplifier is a 50 watt Amplifier'.
All a matter of taste, or lack there off.
grins,
Hein.
