re: .9 Yes, it's a lovely dessert made with carrots, milk, cardamom,
pistachio nuts and golden raisins. Oh, and sugar. It's really good
with heavy cream, unless you've lost the taste for milk fat. But it
takes a while to make.

Oh, I know what halwa is, or at least I *thought* I did. What you
describe is not what I think of as halwa, a vanilla-flavored
confection that's very sweet and *very* dry. If I remember
correctly, it's a paste made from seeds of some sort and pressed
into bars. It's a Middle Eastern treat; the Armenian side of my
family used to indulge it in more than was good for us.

| halwa??? I spell it halvah, pronounced like "ha-le-vah". It's made of
ground sesame seeds and (I think) oil and a sweetener, maybe honey. In
the U.S. it is drier; in Israel it was goopy. Both are sweet, but the
goopy variety was sweeter.
In general, people hold STRONGLY to one of two opinions:
This is terriffically delicious!!! (this is me)
This stuff tasts like pasteurized cement!!!

I got my recipe out of an indian cookbook. This tastes nothing like
the halvah that can be either terrifically delicious or taste like
pasteurized cement. :-) I don't know if they're related (halwa and
halvah). I like halvah, too.

I've seen it spelled a few different ways (transliteration can be a
pain in the ass at times), with "halwa" being one of them, so I
assumed we were talking about the same thing.

Actually, I'd say it tastes like sweetened particle board. But it's

It seems that we have a good representation in the dessert area.
Perhaps salad-type stuff would balance things out. As I mentioned, I

Here's my recipe for Carrot Halva. It's actually Madhur Jaffrey's
recipe for carrot halva (Gajar ka halva) and I got it from her book
"Indian Cookery". The book I have was bought in England, but I know
that it is sold here, too. I don't worry too much about the probable
inaccurate quantities that result from using American measures.
p.s. Pat, I tried to send this to you but Nmail returned my message
because your node was unknown. I'd love your recipe for Bombay Halwa!

Serves 4:
1 lb (450g) carrots (1 bag)
1 1/4 pints (700 ml) milk (I use whole milk for this recipe; for
a double recipe I use 2 3/4 cups American)
8 whole cardamom pods
5 TBSP vegetable oil or ghee
5 TBSP sugar (I use 8 for a double recipe)
1-2 TBSP sultanas (I use golden raisins or regular ones)
1 TBSP shelled, unsalted (I use salted)
pistachios, lightly crushed
10 fluid oz (275 ml) clotted or (I use heavy cream or whipping cream)
double cream, optional
Peel the carrots and grate them, either by hand or in a food processor.
Put the grated carrots, milk and cardamom pods in a heavy-bottomed pot and
bring to the boil. [Today I used my big frying pan; it goes faster if you
use a shallow pan than a deep on.] Turn heat to medium and cook, stirring
now and then, until there is no liquid left. Adjust the heat if you need
to. This boiling down of the milk will take you at least one half hour or
longer, depending upon the width of your pot. [It still took me an hour.]
Heat the oil [I don't measure but I think I use about half of what the
recipe calls for] in a non-stick frying pan over a medium low flame. When
hot, put in the carrot mixture. Stir and fry until the carrots no longer
have a wet, milky look. They should turn a rich, reddish color. This can
take 10-15 minutes. [At least. I never think I've cooked them long
enough to match the description.]
Add the sugar, sultanas, and pistachios. Stir and fry another 2 minutes.
This halva may be served warm or at room temperature. Serve the cream
on the side, for those who want it.

Laura's Wham-O Bar-B-Que Sauce
Combine the following ingredients in a sauce pan. Simmer for about 1/2
hour. Puree in a blender (or some reasonable facsimile).
1 CUP strong black coffee (not instant coffee, brewed coffee)
1 CUP Worcestershire Sauce
1 CUP Catsup
1/2 CUP cider vinegar
1/2 CUP honey
1/2 CUP dark brown sugar
3 TBS. Chili Powder
1 TBS. White Pepper
4+ Chopped onions (more or less depending on the size of the onions or how
much you like onions)
1/4 Cup+ Minced Chili Peppers (I use a combination of hot peppers, again
use in varying quantities to taste)
5+ cloves minced garlic
Rumor has it that this sauce is even good on tofu...
