Anyone have a [c]haroset recipe?  This is the cinnamon and apple fruit salad
used in Jewish (and Christian) Seder meals.  I'm going to a Seder meal and need
to bring a dish; I figured I'd bring haroset. I made it once but don't have
the recipe.

     Eric,

     The ultimate in simplicity. This is from memory, your mileage may vary. 

     Take about 5lbs of firm apples (I like MacIntoshes or Courtlands the
     best), and peel and core them. Set them aside for later (chip them too
     soon, and they turn soft and brown - YUCK!).

     Dice up a box (1/2 lb?) of dates and/or a med size box of brown (not
     golden) raisins. Point is, get about 1/2 lb of dried fruit in there as
     a binder, as much as anything else (plus, it makes it a bit "toothy"). 

     Chop up 1 lb or so of dry-roasted, unsalted nuts - almonds or walnuts
     work best. (Slivered almonds are WONDERFUL!) 

     Get about 1 - 1 1/2 cups (kosher) red wine ready. If you're having
     Seder with a bunch of Nazarenes or funny-mentalists who don't inbibe
     alchohol, even for religious purposes, substitute *unsweetened* apple
     juice for the wine. The sweet stuff will make it sickeningly sweet.
     *DON'T use grape juice, the color will be right, but the taste will be
     *awful*! (Can you tell I've done this the *wrong* way a few times?) 

     OK, chop up the apples *real* small (you're almost making applesauce
     here!). Add Cinnamon, Apple Pie Spice, Nutmeg, and other spices that
     you'd use to make applesauce or an apple pie (ie - season to taste). 

     Mix in the red wine (or substitute), to make a slightly runny paste (a
     little stiffer than thick applesauce). Mix in the dates (or other dried
     fruit) and the nuts. You should end up with something that tastes a
     little sweeter than applesauce, is a fairly dark brown, and has the
     approximate consistency of brick mortar (which it represents in Seder).

     A good Seder to you, my brother! A stay away from the Gefilte Fish, at
     *all* costs!! (I don't like picled herring, either!)
