Several months back I read an article that referenced a book dedicated
to "how to judge trophy animals in the field" It covered all the big
game animals of N.America, told you what to look for prior to taking
the animal. Does anyone know the name of such book?

It is _Complete_Book_of_Hunting_ by Clyde Ormond. It was first published in 1962. No doubt it's been out of print for some time now, but I occassionally run across copies. A used book store should be able to help you find it. You might also wish to check note 682 in this very conference.
