Just read this and wanted to share. Fine time to find-out.
The N.H. Dept. of Public Health has issued a warning against cadmium
toxicity in moose and deer, except in the case of very young deer,
in which only an occasional meal (One per year) is advised.
Acid rain leaches out cadmium, a heavy metal, which then finds its way
into moose and deer food chains.
Soon the Liver and kidneys, which act as the bodys final filter,
contain high amounts of cadmium, which is quite toxic to humans.
N.H. moose project leader Kristine Klien explained that moose very
quickly pick up high concentrations of cadmium because they feed heavily
on aquatic vegetation.
What they have found in some cases are cadium levels so high that if
you eat a meal of moose liver and kidneys you will develop a case of
cadmium toxicity that night and get very sick,"Klien said. (In cases
with lower cadmium levels, it make take several meals before you become
ill.)-
So, check those "Livers" before eating.....How do you do that? I would
think that States bordering N.H. would have the same problems, wouldn't
you?

If you're planning on eating the liver from your deer, make sure you take your
deer to a weigh in station that is staffed with a biologist than can measure
the teeth and ascertain the age. Sounds like you don't want to eat 'em if
your deer is older than 1.5 years.
