    I recently bought frozen mango chunks from the store and they are a bit
    tart.  I originally thought of using them in a fruit salad or a regular
    salad, but now I feel it is too tart for that purpose.  
    
    Any ideas what I can do with them?

    You might want to search out a sherbet recipe and substitute your
    Mango for the fruit called for.  The mango sherbet I buy at the

You may want to make Mango sorbet:

Mango Sorbet

Ingredients

     2 mangoes, peeled and stoned 

     25g (1oz) icing sugar 

     juice and zest of 1/2 lime 

     300ml (1/2 pint ) water 

     To decorate: mint sprigs 

Instructions



   1.Place the mangoes in a food processor and blend until smooth. 

   2.Mix together with the remaining ingredients and place in a freezer-proof

     container. Place in the freezer until just begining to freeze. 

   3.Divide into 4 glass dishes and return to the freezer until frozen. 

   4.Decorate with the mint sprigs and serve immediately. 


Serves: 4

How about mango icecream:

SWEETS - MANGO ICE CREAM


                         Ingredients


                         2 pints vanilla ice cream

                         1 cup of toasted unsalted almonds

                         2 cans mango pulp

                         2 teaspoons of cardamom powder



                         Serves: 12-16



                         Soften ice cream on the kitchen counter for about 1

                         hour. Fold in the mango pulp, almonds and cardamom

                         powder. Then freeze.

Here's one for Mango salsa!



Ingredients...


     1 large red pepper 

     1 large ripe mango 

     juice of � lime 

     1 small red onion, chopped finely 

     1 tsp sugar 

     � " ginger, peeled 

     1 small red chilli, deseeded 

     1 tbsp coriander leaves, chopped 

Instructions...



   1.Cut the pepper in half and remove seeds. Grill skin side up until the skin

     chars. Remove from the heat and cool slightly. Peel away the skin then 
     finely chop flesh. 



   2.Peel  mango and cut the flesh into very small dice.Put in a bowl with the

     onion and lime juice. Sprinkle with the sugar. 



   3.Grate the ginger and stir in. Chop the chilli finely and add to the other

     ingredients. Stir then set aside for 15 minutes. 


   4.Stir in the coriander leaves just before serving.

MMMM...Mango and banana bread

1 c Butter

1 1/4 c Packed Brown Sugar

3 Eggs

3 c Self-raising flour

1/2 ts Salt

1/2 ts Cinnamon

1/4 ts Grated Fresh Nutmeg

1 1/2 c Mashed Ripe Bananas

1 Small Ripe Mango

1 c Golden Raisins

1/2 c Chopped Walnuts



* The recipe says to use self-raising cake/pastry

flour and the small ripe mango should be peeled and

pureed. In a bowl, cream the butter with sugar until

fluffy; beat in eggs, one at a time, until

incorporated. In another bowl, combine self-raising

flour with salt, cinnamon and nutmeg.

Combine mashed bananas with mango puree.

Mix the dry ingredients and banana mixture,

alternately, into the creamed mixture until batter is

just combined; fold in raisins and nuts. Pour batter

into 2 greased 8 1/2 by 4 1/2 inch loaf pans. Bake at

350 degrees for 50 - 60 minutes or until cake tester

inserted in the centre tests done. Leave in pan for 10

minutes; remove form loaf pans and let cool on racks.

Makes 2 loaves.

Here's one for Mango Prawns

Mango Prawns (4)

Ingredients...



     8 large Prawns, cooked 

     4 mango's 



Dressing...



     1� cups mayonnaise or thick cream 

     2 tbsps freshly grated horseradish 

     a sqeeze of lemon or lime juice 

     1 tsp sugar 

     a little ground pepper 

     a little cream to thin dressing if needed 


Instructions...



   1.Peel the prawns and cut up into chunks. Cube the mango flesh, then mix the

     mangos with the prawns. 



   2.Mix all the dressing ingredients then stir gradually into the prawn and

     mango. Stop when the mixture is nicely bound 



   3.Divide between four bowls and serve chilled garnished with strips of red

     pepper and mint leaves.

                  Pappacito's Mango Chicken

Yield: 2 servings



1 ea 14 oz can, Mangoes 4 ea Chicken Breasts

1/2 c Orange Juice 1/2 c Seasoned flour

4 ea Cloves of Garlic 2 ts Butter

1/4 ts Salt 2 tb Orange Liqueur

2 tb Salad Oil 1 x Toasted Almonds



Pound the chicken breasts to 1/4 inch thickness.

Reserve 8 perfect mango slices for garnish.

In a blender or food processor, whirl mangoes (including syrup) with

orange juice, garlic and salt. Set aside.

Heat oil in saute pan. When hot, dip chicken breasts in seasoned flour --

be careful to shake off excess flour -- and place them in the hot pan.

Saute chicken, for approximately 2 minutes per side.

Add butter and mango puree to the pan. Cook until the sauce is reduced and

fairly thick -- about 2 minutes.

With a spatula, remove the mango-covered chicken breasts from the pan and

place them on a hot platter. Spoon remaining mango puree over the chicken.

Sprinkle with toasted almonds. Garnish each breast with 2 mango slices.

For a more pronounced mango flavour, use fresh mangoes. Use 2 fresh

mangoes and 1/2 cup of orange juice. Boil for 1 minute.

From owner-chef Barry Pall of Pappacito's, a fast-food restaurant in the

Bell Canada Tower ind downtown Montreal. He refused to identify the spices

in the seasoned flour but will admit that there are 2 teaspoons of

powdered chicken soup per cup of flour.
