4121.0. "BREAD: Parmesan Cheese Rolls/Bread" by NAC::WALTER () Tue Mar 11 1997 14:52
This recipe comes from my Inn cookbook that has New England Inn and
their favorite recipes.
Parmesean Cheese Rolls or Bread:
--------------------------------
2 pkgs yeast
1 cup milk
1/2 cup water
2 T butter or margerine
1 egg, well beaten
3/4 cup romano or parmesean cheese
3 1/2 - 4 cups white flour
1/2 t salt
1 1/2 t garlic powder
1 t italian seasoning
Heat milk, water and butter until butter is melted and mixture is hot
but not boiling. Let cool till lukewarm.
Add in mixer bowl, yeast, 1 1/2 cups flour, salt, garlic powder and
italian seasoning. Add milk/water/butter mixture and mix until well
blended at low speed with dough hooks for three minutes. Add beaten
egg and 1/2 cup of cheese with mixture turned to low speed. Then
start adding flour, 1/2 cup at a time until mixture forms a ball and
leaves sides of bowl and becomes elastic.
Turn oven on 225 and preheat. Turn oven OFF and put dough in a glass
well greased bowl and leave in oven for 10 minutes. Take dough out,
and roll out. At this point you can either cut dough up into two
loaves of bread or make 16 rolls. I make 8 rolls and one loaf of
bread. Put rolls in well greased 9x13 pan and bread into 8x8 well
greased pan. Melt 2T butter and dip rolls into butter or brush
loaves with butter. If making rolls, dip rolls in 1/4 cup of leftover
cheese or if making bread sprinkle cheese over loaves. Let rise for
20 minutes.
Bake in 375 oven for 20-25 minutes. Let cool on baking racks.
This has become one of my favorite bread recipes. Not only are
the rolls wonderful just out of the oven or for sandwichs but the
fact that this bread can be made in about an hour makes it a
wonderful addition to any meal without having to have hours to
spend on rising bread.
Enjoy,
cj

4121.1 | NO DOUGH HOOKS | CSLALL::MHOLMES | | Mon Mar 17 1997 13:52 | 4 |
| I don't have a mixer with dough hooks. Will it work with a regular
mixer, or by hand, or won't it mix well enough?

4121.2 | my thoughts | NAC::WALTER | | Tue Mar 18 1997 09:16 | 6 |
| I would think that you could use a regular mixer for the beginning of
the recipe but then you would have to knead the dough by hand when
you start to enter the flour into the recipe. It would be too much for
a mixer and needs to be kneaded.

4121.3 | What about a bread machine? | HYDRA::BRYANT | | Tue Mar 25 1997 11:30 | 2 |
| I'm wondering if you could just throw everything into a bread machine and forget
about it.
