    Does anyone know any stores in the Nashua, NH area that carry potato

    A good subsitute for potato flour is the instant potato buds used to
    make mashed potatoes.

    If you are using the potato flour as a thickening agent, you can use
    corn starch instead - potato starch will actually thicken up even more
    than corn starch does.  (I practically never use potato starch for
    anything except during Passover.)

    Thanks for the responses.  My primary reason for asking is that I have
    a number of Passover recipes that call for potato starch and I'd like
    to stick to the recipe if at all possible (I've run into trouble in the
    past doing substitutions).
    
    RE: .1, just curious, which Shaws?  I frequently shop at the Shaws in
    Milford and that would be great if it was that one (very close to
    home).  Thanks.

    The Shaw's in Hudson, which is a predominately Portuguese town, carries
    a few Passover items near Passover - I was in a hurry last time I was
    in there so I don't know if they already have set aside shelf space for
    this stuff yet.  With Purim next week already, Passover is coming up
    fast, so it should be real soon that potato starch and other stuff will
    start appearing.  I don't actually bother trying to do Passover
    shopping at the Shaw's even though it is very close to my house because
    they don't have much (not many Jewish people in town).  I usually go to
    the big Stop n Shop on route 9 in Natick.  They have most stuff.  Then
    I make a run into Brookline in the crowds the Sunday morning before
    Pasover starts, to get whatever I couldn't otherwise find.
