| What part of what kind of cactus are you cooking? The only cactus I
normally find in stores where I live is the fruits of the prickly pear,
and the only thing I can ever recall doing with those is mincing them
and adding them to muffin batter.

| The large fleshy pads of the prickly pear are called Nopales, or
napolitos in this part of the county. Burning or pulling out the
spines is a pain, but they can be worth it.

| This probably belongs in the 'Joy of GRowing Up Italian' note :)
My Italians go BERSERK over prickly pear fruits. My mother-in-law will
(carefully!!) peel an entire bucketful to serve after a family meal
when they are in season, and they are gone in double-quick time. I
can't seem to get a taste for them, so I leave 'em to the connoisseurs.
You're not supposed to eat to many of them at once, as they are said to
'plug you up'. Sounds nasty ... Although there's the time that my
mother-in-law ate 32 in a sitting.... eek.

| Although I've never cooked with it, I have had it as an appetizer
in a restaurant called either Sol Azeteca or Azteca del Sol in
Boston/Cambridge.
It was sliced into thin strips and baked with cheese and spices, served
in an individual au-grautin dish. Much too long ago to remember the
details, but it was wonderful.

| Here in Mexico Nopales are used for diets and people drink it like
juice. For example if you make Nopales juice and grapefruit juice in
the blender, you are supposed to lose weight.
Also, Nopales are very good for diabetes and good for the heart.
Another way to cook Nopales is on the grill, brown them and eat them.
Those are the only way I've seen nopales cooked here in Mexico, and
since I don't really care for them I don't pay too much attention.
