4072.0. "Scalloped Corn, aka Corn Custard" by GANTRY::HULL (Systems Integration [Delivery]/Motown) Sun Jan 07 1996 16:23

This is a simple to make, delicious side dish that goes well with just
about any meal. My family always makes it for the big holiday dinners, and
it's a favorite at my office whenever we have a pot-luck luncheon.

SCALLOPED CORN (aka Corn Custard)

1 can cream-style corn
2 Tbl flour
1/4 C. milk
1 Tbl melted butter
2 eggs, beaten
1 Tbl sugar
1 tsp salt

Mix all ingredients in a deep baking dish. Preheat oven to 350 deg. F.

Mix 1/2 C. cracker crumbs with 2 Tbl melted butter for a topping.
Sprinkle on top before baking.

Bake for 1 hour. Test for doneness by slipping a table knife
down into the corn, looking for any remaining liquid that hasn't either
cooked off or been absorbed. Cook longer as needed 'til liquid is gone.

I usually double this recipe for anything more than 2-3 people.

Enjoy!
