| Any idea if she eats any dairy foods? There's always yogurt, a
variety of cheese cubes, with a fruit salad.
Also any veggie salads, marinated vegetables, three-bean with lots of
other veggies tossed in. No need to heat or cool.
Nut butters (much more interesting than peanut butter - try almond or
cashew! Yum!!)
Pasta salads don't need to be heated or cooled, as long as there is no
mayonnaise in them, same with rice salads.
Also try the Vegetarian conference (Trucks::Vegetarian). I believe
there's a note concerning what to bring for lunch.

| Try your local health food store for tahini and miso spreads. They are
high protien, low/non fat and delicious!
Also, vegie burgers which can be cooked and then stored in the fridge
can be used in sandwiches. Try a vegie pattie in a pita pocket with
lettuce, tomato and tahini dressing. These days you can buy them in
the local grocery store. Green Giant makes them and you can find them
in the freezer section. I actually had a coupon for them in the Sunday
paper a couple weeks back.
Tofu is always a challenge to make it taste good, but if you have a
vegie cookbook you'll find recipes that resemble egg salad and if
you're really feeling adventurous, try gluten!

it at Joyce Chen? I know they sell miso paste. Any idea how to make

The tahini I've seen is made from pulverized sesame seeds. When it has settled,
you get a significant amount of oil floating on it. I suppose they can make a
low fat version of it, but it would probably have all the blech-ness of low fat
peanut butter.

| How about hummus and pita bread, some fruit, and a beverage?
We do this a few times each month. Worry about the fats in
the tahini if you want, but it sure hits the spot. You can
get reasonable pre-made hummus at BJ's in 1qt containers.
I prefer making it.
Also, stuffed grape leaves (cold is ok), cous cous,
and bean salads come immediately to mind.
Also as a suggestion, check out the Moosewood Cookbook
for other vege items suitable for brown baggin'.

| Thanks to all of you that responded..I've muddled my way through the
aisles at my local Shaw's and have come up with several days worth all
based on your ideas (and one of my own..peanut butter and jelley!!)
Now I can relax and enjoy my visitor, knowing she won't starve during
the day :^)

Tahini is decidedly NOT low-fat. It's made from toasted ground
sesame seeds and is packed to the gills with sesame oil. On the
other hand, miso, which is made from fermented soy beans, is indeed
low-fat and high-protein.

No one claimed it was...the requirement was vegetarian. Anyway,
if you examine most cultures we Americans consider to be
vegetarian, you will notice that it is universally NOT low fat.
Anyway, tahini and miso don't taste the same 8^)

| A few months ago I had a "bagel sandwich" that was terrific. Since
I usually prefer to bring my own lunch, I made my own version for
brown bagging it.....
Syrian bread
spread with tahini (I used one purchased at Market Basket with
roasted peppers..3 shieks brand)
Slice of Havarti cheese
Sliced tomato
Sprouts (either alfalfa or radish-alfalfa)
Another suggestion....
bagel sandwich with flavored cream cheese
...Bagel Alley has Veggie, cinnamon raisin, etc.
(better still make your own using dip mixes or Good Seasons
dressing mixes, maybe even mix with fruit jam for something
different like strawberry..more economical too!)
Cold bean salads and pasta salads filled with chopped veggies (or
frozen mixed ones that have been thawed not cooked so they are still
somewhat crunchy).

| I like sushi (rice w/vinegar & a little sugar) Nori or vegetarian
sushi. Your student probably khows how to make this. Basically take a
sheet of nori (seaweed), top with steamed rice, layer cooked egg & julienned
vegetables and roll up in the nori; then cut in 1/2 inch slices.
In California I have tasted delicious sandwiches made with advocado,
tomatos, and alfalfa sprouts on whole grain bread.

I purchase tahini and miso spreads on a regular basis. The ones I buy
have only 2 grams fat per serving (2 Tbls). I consider this to be
low fat.
Granted, if all you were eating was tahini, you would not be eating
low fat, but _that_ is not what I said.

stuff I see is swimming in fat. I'd be willing to try a low fat version.

| Once again, I said tahini and miso spreads (meaning spreads made from
both of these ingrediants). I do not believe you can find tahini with
2 grams of fat per serving. The spreads that I buy are made by
Judith's Deli in Los Angeles and are available through my co-op market
and other health food stores.

| In Victory's market today, I saw a vegetarian miso/tahini
spread in the refrigerated section near the deli. 2 tablespoons
contain 2 grams fat.
