    I didn't find any notes on mint (hope I didn't miss it) so here goes
    
    What do people use fresh mint for? I have peppermint, applemint and
    pineapple mint and tons of cat nip (my kitties have dibs on that).
    I also have lemon balm. I know you can make tea out of it but what
    else can you do with it.
    
    I liked the smell of it that is why I grew it.

    You can take a few leaves and add it to salad. Or try some mixed in
    with baked potatoes on the grill.  Or use it in a marinade on lamb.
    
    I also make mint jelly. Follow the directions on the liquid pectin [I
    use Certo] and it should come out fine.

I take a whole stalk out of the garden and fling it into my Portuguese
soup. (I remove it before serving, but the flavor is still there; so
subtle that guests regularly try -unsuccessfully- to identify the
"different" flavor that makes the soup so good.

    Don't forget Roast Lamb and Mint Sauce.  The latter is basically minced
    mint leaves, malt vinegar and sugar. Don't remember the quantities so
    just experiment until it tastes good to you.

I agree with the recommendation to use in marinades. It's also nice in
Indian and North African dishes (i.e., as an addition to any dish which
also uses cumin, cilantro, etc). Can even be used in paella, though
don't call it paella if you do :-).

    Add a good sprig of mint when boiling new potatoes.  When cooked,

I love natural yoghurt, but just to make it a little more interesting
as a snack I add some chopped mint and a dash of white wine vinegar.
This is also one of the classic side sauces served with Indian
curries.

    a couple of mint leaves in a pesto sauce makes a nice twist.
    
    Then there was the time I used all mint instead of basil for the pesto.

	a few whole leaves to decorate the shake.

    Well.... mint does NOT go into paella (don't "kill" my favorite dish, 
    please) I disagree with people who call "paella" to any concoction that
    includes rice and some meat or vegies in it...
    
    Saffron is NOT mint - and saffron is needed for paella, please let's not
    confuse both things...

    I "killed" my favoritest mint!  It took me the darndest time to find
    someone who had the same kind to get a starter going again.  There is
    only ONE real mint as my neighbor's mother told her and I killed it!
