I'm not sure it's "THE definitive" BBQ book, but I highly recommend
Chris Schlesinger's "The Thrill Of The Grill". Chris Schlesinger is
associated with two restaurants in the Boston area: East Coast Grille
(Inman Sq, Cambridge) and The Blue Room (One Kendall Sq, Cambridge).
TOTG is full of very interesting BBQ main dishes and many side dish
recipes/suggestions to go along. Many of the recipes (especially fish
and seafood) are Caribbean in nature and there are various southern BBQ
recipes which compare/contrast BBQ in different areas of the southern
US. It also contains other good info about BBQ (equipment, info on
regional influences) and some pretty good commentary to go along
(making it one of the most fun reading cookbook I have).
It's not my only BBQ book, but I'd say it's currently my best.
