|  |     I don't use a specific recipe.  I looked at the note -1 referres to but
    it seems like alot of work.  If you had it at a restaurant, chances are
    they had some type of stuffing.
    
    Anyways... I would put one layer of haddock in a greased casserole pan. 
    Stuffing is probably a mixture of butter, stuffing mix (if you don't
    want to make your own), garlic, parsley, chopped spinach, grated
    cheese, and pepper.  Put this on top of fish, add another layer of
    haddock and pour a sauce over this that is made from a typical white
    sauce flavored with some cheese and wine (don't pour too much or it
    will be mushy) and cook for about 30 minutes at 350.

    I made another, quicker version of spinach stuffed sole last night. 
    Went over well with the "fish hater" too. :)
    
    1.25lbs of Dover Sole
    1 10oz. package frozen chopped Spinach
    Minced Garlic
    Sherry
    Townhouse Crackers
    Mrs. Knorrs Newburg Sauce
    
    Wash and dry sole.  Grease deep casserole dish.  Put one layer of sole
    on bottom on dish.  Mix cooked and squeezed dry spinach with a teaspoon
    of crushed garlic, 1/2 package of townhouse crackers, crushed, with
    enough sherry to moisten.  Layer this on top of sole and place rest of
    sole on top of mixture.  Make newburg sauce, pour over.  Bake covered
    at 375 for 20-25 minutes.  Take cover off and bake for additional 10
    minutes until edges are browned.
    
    Takes about 15 minutes to assemble and get into oven.  Served with
    fresh tomato slices drizzled with olive oil and vinager and brown rice.
