    What is Salt Pork?  I was looking at a couple of the baked bean
    recipes and almost all of them called for salt pork. I want to make
    some good baked beans with flavor but do I need to add this?  Can
    bacon be a good substitute?

Salt pork is (surprise, surprise) pork belly preserved with salt.  It looks 
to be from roughly the same part of the animal as bacon.  It's widely 
available in supermarkets in New England, usually in the same section as 
bacon.  I think the curing process is different from bacon--I don't think 
salt pork is smoked.  If I had to do a substitution, though, I'd use bacon.

.1 is correct, it's essentially bacon that isn't smoked.  I agree that
bacon would be a good substitute.

Around here at least, fat back is different in that it's practically
all fat, unlike salt pork and bacon which have both lean and fat.

Maybe it was mis-labelled fat-back. :-)

The salt pork around here (when you can find it--fat back is more common)
is about half lean, half fat.

As far as finding it in Colorado, I have purchased it at both Safeway and
King Soopers.  Even the Safeway in Monument carries it.  But just try to find
Ham Hocks.  I've searched many stores in this area and cannot find them.

But the Safeway in Monument is a palace - it's nicer than most other 
grocery stores in town :)

Try M&M Meats on Hancock in the little, ratty strip mall about 1.5 blocks 
north of Fillmore (same shopping center as OEM electronic parts).  It's 
between the school and Fillmore (east side).

    I wrote the original note.  I did find the Salt Pork in King Soopers
    in Colorado Springs.  Thanks!  However, I decided to not buy it and
    use turkey bacon instead - came out great.
