Does anyone else grow their own horseradish?  What is the best time to harvest
it?  How is it stored?  What do you do to process it?  Are there secrets to
keeping its potency?  Any help will be appreciated.

    I've used my horseraddish throughout the year, but find the fresh new
    roots in the early summer are the best.  If you leave them a lot longer
    they get rather woody.  I just peel and grate the roots and fold them 
    into thick whipped cream and add freshly ground sea salt and white 
    pepper corns, wonderful with rare roast beef!
    
    If you leave this in the fridge over night the flavour improves 
    drastically and it's also a lot easier than leaving it to the last
    minute when your guest are dying to eat.
    
    Hope you enjoy it it's a million times better than the bought stuff!

I make my horseradish with vinegar.  It looses potency as it ages, but I've
never had it spoil.  The last batch lasted almost a year.  The root didn't look
that big in the store, but it made almost 1 quart!!!

    This doesn't have any vinegar in it, just pure grated horseradish.
