    On the way to work today I saw that the first raspberries are beginning
    to ripen in people's gardens.  These reminded me of the summers I spent
    with my Granny as a child.  She never bought soft drinks, but had
    something she called Shrub.  The last year I was there, was the summer
    I turned 12, too young to think of writing down recipes.  I
    participated in making it, and remember cooking lots of raspberries, adding
    lots of sugar and an unbelievable amount of vinegar.  This mixture was
    not sieved, so the fruit pulp was left in.  This was then canned.
    To drink it, you filled a glass about a quarter (a bit more if Granny wasn't
    watching) full of this fruit glop, and filled it up with nice cold
    water.  I have always had a vague feeling that the Ambrosia of the gods
    must have been something like this.
    
    Does anyone have a recipe?
    
    P.S.
    
    I remember seeing a recipe for another summer beverage involving
    vinegar in here somewhere - but it had a rather unusual name, which I
    can't seem to remember.  Does anyone remember this name, and where it
    is posted?

    I think the other vinegar-based beverage is "switchel" - see topic 2978
    for some discussion of that. (The "raspberry shrub" sounds pretty
    tasty; and it _is_ just the weather for experimenting with cooling
    beverages!)

    Raspberry Shrub

    Raspberry shrub mixed with cold spring water makes a pure, delicious
    summertime drink.
    
    2 lb. raspberries (about 4 pints)
    2 cups vinegar (approx.)
    8 cups sugar (2 cups sugar for each 2 cups of raspberries)
    
    Put the raspberries in a non-reactive pan and pour in vinegar to
    scarcely cover berries.  Add sugar.  Bring to a boil, skim and let it
    cool.  Strain and bottle the liquid.  The syrup can be safely
    refrigerated for about a month, but must be used within two weeks after
    a bottle is opened.

    Just want to let you know that I picked raspberries at the
    Durocher Farm in Litchfield on Sunday and again last  evening.
    They are wonderful.  Thanks for your recipe....  I remember
    my mom doing the same thing.   I freeze them in 1 qt. pkgs.
    and I use them for filled cookes.  You need to simmer the
    berries w/sugar and corn starch and render it down to the
    consistency of a filling.  I  alsohave another recipe to make
    Raspberry Mousse tobe spread on Chocolate Shells.  These are
    made by covering clam shells with foil and painting them with
    white and chocolate - chocolate.  Put in freezer.  Separate
    and remove foil.   Place the mousse in the cups. Very nice
    for holidays. I'll bring in the Mousse recipe soon.
    
    We were told that we would only be able to pick raspberries
    for another week or ten days.  
    
    By the way, at Durocher's - they will pick again in September.
    The berries are $1.75/pt. and they are $3.95/pint at the
    stands.          Happy berrying and eating !!!!1

    What kind of vinegar do you use in the shrub?  I presume either white
    or cider vinegar?  What's best?

    If I were to attempt this, I'd use white vinegar, rather than cider. 
    I would think the cider flavor might interfere with the delicate
    raspberry fragrance/flavor.

    Chocolate Shells w/Raspberry Mousse..... as I  promised..
    
    Chocolate Shells
    
    Place semisweet and white chocolates in separate bowls. 6-oz. each.
    Melt in microwave on high for 1-1 1/2 mins.  Stir until smooth.
    
    Cover shells (lg. ocean shells) w/foil (8).  Paint the outside with
    thick melted chocolate.  Place in refrig.  Remove shells one at
    a time and carefully remove chocolate shell from baking shell.
    Peel off foil - place shell back in refrig.
    
    Raspberry Mousse
    
    Meanwhile:   beat 1/2 C. heavy cream
                      1/2 C. raspberries
                      2 tbs. raspberry liquor
                      2 tbs. sugar
    on high speed until stiff peaks form.   Chill
     
    Place 4 bottom shells on serving platter - spoon in raspberry
    mousse.  Carefully lay remaining shells on mousse,  Garnish 
    with raspberries.  Serve immediately.   Makes 4 servings
    Prep time: 30 mins.  chill:  1 hr.  Ready to serve: 1 1/2 hrs.
    
    I have made these -  they are tried and true - No Complaints...
