| Caio Italia (sp?) on PBS had an episode that did several pizzas,
some of which had no cheese. I believe what was used instead was
Olive Oil (spread over crust before everything added on top).

| I often brush a Boboli with olive oil and then sprinkle with oregano, basil
and some freshly minced garlic. Just fine with no cheese (but, no tomato,
either.)

Well - you're right - Boboli's _are_ made with cheese, but any of the ones
I've had include it in such miniscule proportions that it's hardly noticeable.
Since the basenoter didn't mention a need to stay away from cheese for health
reasons, but simply a dislike for the cheese normally on a pizza, I thought
that the small quantity (and quite different state) of the cheese on a Boboli
might not be of concern. Then again, I've noticed recently that there are
"Boboli look-alikes" on the market now as well - I don't know whether or not
they are also made with cheese.

| I make cheeseless pizza very often.
I make my own crust, use homegrown tomatoes (cut very, very thin)
plenty of minced garlic, tons of basil, and generous drizzles of olive
oil over all... it is delicious, especially if left to bake till golden
and a bit crispy on the edges...
Also onion pizza does not have any cheese... fry "plenty" of very thin
cut onions add salt and pepper and spread on dough... add salt and
pepper and bake till done.
There are many, many ways to make pizza without cheese

| Do you dislike ALL cheese? Or just specific ones? Have you tried
using other cheeses on pizza? For example, I really dislike cheddar
cheese on pizzas, and many commercial chains use a cheese blend that
includes cheddar. I personally prefer a blend of mozzarella and
provolone. Another favorite is smoked gouda on top of cooked spinach
puree (instead of tomato sauce).
If you really hate all cheese (on pizza) you can always veggie up a
pizza to replace the moisture of the cheese. Try adding fresh tomato
slices and sliced black olives.

| Pizzeria Uno had a cheeseless pizza which included some righteous breed
of potato (probably red-skinned or Bliss) sliced very thin, and red
pepper strips, and I don't remember what else. What I do remember is
that it didn't come off, in my opinion, although I felt it could have
been done with a little experimenting (by someone with a little talent,
so we're talking about S.E.P.� here). Anyone remember more, or going
there soon? Assuming they didn't nuke the recipe as a failure -- the
more innovative dishes at P. Uno have been *very* volatile the past
year or two; seems they give up on a thing before very many of their
customers could have had a chance to try it.

| I'd love it if Pizzerio Uno would develop a good dairy-free pizza. I'm
exceedingly fond of their pizzas but unfortunately my tummy thinks
otherwise.

| L. Steinhart - have you tried taking some Lactaid tablets before eating
pizza? I have lactose intolerance to certain dairy foods, and that
always seems to help me.

| Barb - I buy bottles of lactase at General Nutrition Center (much
cheaper than Lactaid.) I'd have to take a handful to eat pizza, and
even then it is a gamble. I think I might have an allergy to milk
protein in addition to the intolerance. I always avoid more than token
amounts of dairy and I seek out alternatives.

| I know when I go to a pizza hut, or a resturaunte that makes
pizza (since I also get deathly ill when I eat cheese) I have
them make one with no cheese but with onion, green olives, and
hot peppers. It sounds strange but is good...in fact when I
was in ohio, at my cousins pizzaria, he even added pineapple
and tried it and loved it. Since I don't order a lot of
pizza out and make my own I tend to put more sauce on it before
I take it out to keep it moist...but when out I ask for sauce on
the side.
another type of pizza I like is pesto pizza with broccolli,
and shredded carrots.
you can also make a pizza (white, no sauce) put a little olive
oil on top and fry up some peppers and sausage then place on
top and bake.
I make a mexican pizza with no cheese...I throw salsa, olives,
onions, peppers, and a little lite sour cream (that doesn't bother
me as much as cheese) on top and bake.
As a whole I just put what I would normally put on a pizza, without
cheese...then bake...to keep it moist I would just spread somemore
sauce on it before I take it out of the over.

Pizzeria Uno has a habit of drenching their pizza in about three
gallons of cheap-tasting oil. I like the pizza there- especially the
crust's texture. But you're not the only one I know of that has
become sick after going there. I think it's not the cheese; there's
too little of that anyway. I think it's the oil.
Incidentally, the pizzas are prefabricated there.

frozen off-site.
At least that's what my ex told me. Obviously, she is not
to be trusted >-)
Seriously, they're either frozen or vacuum-packed like those
boxes of their pizza that they sell in supermarkets.
Incidentally, are those as good as their restaurant pies
but without the motor oil?
