    I have a sabatier carbon steel knife which over the years has become
    fairly stained and has now developed a "metallic" smell. Does anyone
    know of anything that would "clean: it back to its original condition.

Every now and then my carbon steel knives get that same look and scent. I
wet the blade, sprinkle on some of my wife's copper pan cleaner (sort of
like Ajax or Comet), and rub the blade between my fingers. It's sort of
like scouring them. I just hold the knife in my left hand with the
cutting edge facing away from me, and pinch the blade between my right
thumb and forefinger, and slide back and forth.

    You could use a (wet) cork instead of your fingers.
