Does anyone know the nutritional value of Water Chestnuts? I love to cook with them and put them in salads, casseroles, etc., but am curious to know, now, if I am really adding to the value of my meals. Thanks in advance. Sheila

Not really: A tiny amount of B vitamins, a bit of complex carbohydrate (starch), quite a bit of fiber. The main benefit I see to them is that they give a nice crunchy texture to dishes. --PSW | |||||

Very little fat and low in calories, if that's what you are concerned about...about 10-15 calories an ounce, I believe. D! |
