I am looking for some recipes for foods native to Puerto Rico. For example,
the standard Rice and Beans, Arroz con Pollo (sorry, don't recall the
Spanish word for beans ;^), Pastelles (sp?), etc.

If anyone out there knows how to cook up these or other Puerto Rican
dishes, please reply!

    Frijoles is Spanish for beans
    
We have our Puerto Rican collection in note 413, though it is primarily
a collection of dessert recipes.

Strecting your request a bit: These may not be [or "are not"] Puerto Rican
recipes but we do have a number of notes which might be places to look for
other recipes:
    
There is a recipe for Arroz Con Pollo in note 1730.8

Also chicken arroz caldo??? in 246.44 though it is not much of a recipe

There is "Bistec con frijoles y arroz" which is a Colombian recipe
along with other elements of Colombian cuisine in note 1438.

I know it's not Hispanic but in note 2045.55 we have the Portuguese
Ervilhas com Ovos + Arroz de Camar�o (Shrimp Rice)

Going quite a bit farther afield we also have the Philipine:
Arroz A La Valenciana in note 2727
