3721.0. "HAM: Leftover Suggestions" by TRACTR::MAZUR () Mon Dec 28 1992 12:37

I'm looking for some recipes for leftoever ham--I looked
in the "leftovers" file, but I'm looking for something along
    the lines of a casserole.

    	...and QUICK AND EASY, please!

I use mine to make incredibly awesome split pea soup (a meal in and of
itself!). Very simple to make and with that great ham, you can get
    spoiled real easily.

i agree with .1 that split pea soup is marvelous however, look again in
the leftovers note. i thought there was an idea (maybe not a recipe,
and if not, i'll get from mother-in-law and post) for a macaroni and
cheese casserole with ham. its truley great and you might not even
need a recipe. i would just do a regular mac/cheese (from scratch mind
you) and add the ham before it bakes. Put on alittle extra cheese,
sauteed chopped onions and bread crumbs on top and, instant success.

you can also make unlimited omelettes, ham salad, crepes, and quiches.

course i never have any leftover ham so its hard for me to think of
    more.... :)

One of the dishes at our Christmas potluck was sliced ham with a
cottage cheese-mashed potato mixture between and around the slices and
those Durkee french fried onions on top. It was heated in the
microwave, but I think it would normally be baked.

Of course, you might as well just serve mashed potatoes with sliced ham.

    My favorite is:

Cut broccoli with ham chunks held together with velveeta-type cheese
with a teaspoon of worcestershire sauce for flavor. Cover with those
french fried onions or crushed potato chips and bake!

    YUM!

Leeks with ham slices wrapped round them and baked in a cheddar cheese & cream
sauce. Add jacket potatos & you're away... yum !

Rsti with chopped ham. ( not sure of the recipe, but it is basically mashed
potato, finely chopped onion, finely chopped ham, & salt all mixed together and
fried on a skillet ). Rsti is great stuff - you can serve it with practically
anything. my favourite is with fried eggs or roast chicken wings.

pasta/spaghetti in cheese or cream sauce with ham

bolognese type sauce made with ground ham

Lasagna type dishes ( with several layers of cheese, ham, lasagna, etc )

ham mushroom & cheese ommelettes ( add some salt, pepper, herbs de provence &
a hint of garlic ), cooked "French style" so that the middle is still gooey

or how about ... ham radio :^)
