3714.0. "Wassail Bowl Recipes Anyone?" by WR1FOR::MEYERS_NA () Mon Dec 14 1992 16:08

    Hello Everyone,

I had some hot wassail yesterday at a local store. Does anyone
have any good recipes for Wassail (with or without liquor)?

    Thanks in advance,

I stopped by nashoba winery in Bolton last week. There recipe calls
for 1/2 Cranberry Apple Wine, 1/2 Apple Cider and some of their mulling
bags. I tried it at home, and actually used 1 bottle of wine to 1/2
gallon on cider with 4-6 tbs of brown sugar, and some seasoning
(cinnamon, allspice, nutmeg). Heat well. Don't melt the ladle in the
    crock pot like I did!

This recipe comes from my grandmother; my family has always called it Wassail
although I don't know how authentic it is...

	1 gallon apple cider
	2 cups orange juice
1 cup lemon juice (I use reconstituted, i.e., ReaLemon)
	1 tsp allspice
	1 tsp whole cloves
	1 tsp nutmeg
sugar to taste (recipe calls for 1 cup, but that's too sweet for me!
			I use about 1/4 to 1/2 cup)
4 cinnamon sticks (ground cinnamon may be substituted; use your
			   discretion :-) )

Mix all ingredients and heat, but do not boil. (A crockpot works well.)
Serve with cinnamon stick "stirrers," if desired.

As you can see, it is alcohol-free. When I've made it for parties, individuals
have been known to spike their own cups with such additions as ginger brandy or
rum.
