3707.0. "Bread: Anadama" by RINGER::WALTER (used to be Aquilia) Wed Dec 09 1992 12:12

printed without permission from the new basics cookbook, a favorite bread
of mine....

anadama bread
-------------

1 package active dry yeast
1/2 cup warm water
1/2 cup cream style corn
1/4 cup molasses
1 t salt
1/4 t sugar
3 cups white flour
1/2 cup yellow cornmeal
2 T melted butter, cooled to room temp

mix sugar, water and yeast together. stir till disolved. mix corn,
molasses and butter together in separate bowl. mix cornmeal, salt
and flour together in another separate bowl.

add corn mixture to yeast mixture and mix at speed 4 till blended
well with 1 cup flour. add another cup of flour mixture and continue
to blend well. when adding last 1 1/2 cups flour turn mixture down
to 1 and knead for about 10 minutes till dough is elastic.

NOTE: the mixture will look very dry. continue to knead but do no
overdo or it will become tough. it is supposed to look like
its dry but the molasses and corn will keep it moist.

put dough in sprayed bowl and let rise for one hour. punch down,
roll into loaf and let rise for another hour.

bake in preheated oven (375) for 35 until brown and hollow sounding
when tapped on at the bottom.

NOTE: this bread looks like a brown type wheat bread but a nice
color addition is egg/water mixed and brushed on top.

enjoy!
