We just picked up a copy of this yesterday (as an early xmas present to
ourselves :-), and it's fascinating. Wells collaborated with Joel
Robuchon, the owner-chef of one of the world's best restaurants (Jamin
in Paris). While it contains several dozen adaptations of his recipes,
it's just as interesting for its philosophy about cooking: the
importance of high-quality, fresh ingredients; having a sense of what
one is doing when preparing a dish (as opposed to following a detailed
procedure), etc. I'll enter a more detailed review if I have the time.
Meanwhile, I highly recommend it for those who see cooking as a
creative art and an end in itself (outstanding photography, too!).
