I am looking for help in baking breads in cans, such as empty
soup cans etc.
I have seen them, like cranberry breads, banana breads, etc.
I have seen small breads like this particularly at bake sales
When they are done up in saran wrap with ribbons, they are nice
to put in baskets of food as gifts.
I was just wondering how long you would bake these in comparison
to baking in a regular bread pan
I did a directory on CAN, and didn't find anything, if I have missed
something, please direct me to a note on this

| I've been making breads in cans since Laurel came out with her first
book and introduced me to the idea.. as she says make sure you don't
use cans that have a seam - these are sealed with lead and not good for
baking in - use only seamless cans.
You bake them until they test done.. baking powder breads until the
tooth pick comes out clean - yeast breads until a little tap on the top
sounds hollow - only ever fill them 2/3 full - this goes for both
baking powder breads and yeast bread - grease the can with margarine
for best results.. butter tends to burn, oil is ineffective and things
still stick.
I do my Boston Brown bread in cans as well.. I steam the bread for 1
1/2 - 2 hours.

Most of the petfood tins/cans I buy (here in the UK) do not have
seams.. I always give them a good wash, then run them through the
dishwasher and then save them for baking in. The tall dogfood can is
especially good for a 1lb loaf of bread.

| the Williams-Sonoma catalog has "glass pans" for this kind of steaming
bread. They are attractive looking too.
