    Hi,
    
    	I am looking the details on a recipe that I once heard about.
    	It was veal wrapped around goat cheese, spinach and pine nuts.
    
    	Has anyone heard of this recipe of something similar?  It sounds
    	great and I'd love to try it.

    Before entering the note, I had done a dir/title=veal and did come
    across some recipes but not quite the one I was looking for.

    I think the point trying to be made was that if you couldn't find the
    recipe you were looking for in one of those topics, you could have
    asked your question in a related topic rather than creating a new note.

    Hi Sheila,
    
    I  hope you are not discouraged.  I have reminded frequent noters to
    point politely, I really couldn't do the work in COOKS that I do if it
    weren't for their help.  

If you don't find what you're looking for (I would look under the
word florentine also, which would indicate dishes made with spinach)
you might try improvising something like this:

veal cutlets
goat cheese (chevre is nice) 
pine nuts
spinach

Lay down one slice of veal pound thin.  Spread with cheese, sprinkle
with nuts, cover with spinach and roll from one short end to the other.
Hold with a toothpick.  Repeat until all veal is used.  Dredge veal 
rolls in flour and brown on all sides, then place in a casserole.  
Then, deglaze the pan with wine or stock.  You could add some mushrooms 
or onions at this point.  Finish the sauce with cream if you like creamy 
sauces.  Pour the suce over the meat and bake in the oven until done.


    I will probably move this recipe when I start consolidating veal 
    dishes sometime in the next month.
