3684.0. "Donuts: Why are my Donuts Tough?" by KELVIN::FLYNN () Thu Nov 05 1992 09:02

    Question:

Trying to make soft donuts. Lately, my donuts are coming out abit tough
and chewy. Can't pinpoint why, maybe the grease temp...not sure. Can
a donut maker help me out?

    Thanks, Jeannie

do not crowd the frying process - you must keep your fat temp high enough
to cook them quickly. I also suggest you get a good fat thermometer if
you don't have one already. And, finally, are you letting them rise
long enough? this one comes from experience, but, especially when making
the old fashioned cake type of donut, you must let them rise to just double
the original size, and it may take longer than the cookbook says depending
on your home temp and humidity - also, make sure they are covered with
a lightweight, slightly damp dish towel so they don't dry out....

not knowing exactly what type you are making, these are a few things to
check for. try the fat temp first, however, as it has the most impact.
