    Anyone have any idea how to make those spicy 
    french fries they're serving in some of the
    cafes at DEC these days?  they are yummmy.
    I assume they use seasoned salt and whatever.
    can't figure how they get the stuff to stick in
    cooking...

    I use a spice mix recipe from a Cajun cookbook (not Proudhomme's), that
    is basically a mixture of salt, black, red, & white pepper, garlic
    powder, and dry mustard.  It sticks fine as long as you sprinkle it on
    while the fries are still hot and a bit oily.

    Oh, so you put in on after they're cooked.  boy,
    oh, boy, I would have been trying to make all kinds of 
    concocktions to try and get it to stay on BEFORE cooking.
    Well it's Friday and I'm tired.  I'll try it 
    Think I'll try it with fries cooked in the oven, instead of
    frying.  I'm not a big french fry eater, but these are GOOD.

    I think there is supposed to be some onion powder and paprika in that
    mix too.
    
    Those curly fries like at Burger King and the cafeteria may have some
    type of seasoning mix on them before deep frying, but I found the
    sprinkle on after stuff to be quite good and you can put it on fries
    that have been cooked in the oven like you pointed out.

    	I do some cooking part-time, and we get fries in bags that already
    have the spices on 'em.  Beats me how they do it, maybe a bit of the
    beef tallow that they use (used to use?) for flavor makes the stuff
    stick. I can imagine the amount of spice that they start out with, what
    with the fries getting jostled around during packaging, shipping,
    etc....

    I just came across a recipe for a somewhat healthier version of french
    fries that involves egg whites, and baking instead of frying.
    They came out very good!
    
    1 1/2 tsp. veg. oil
    2 large potatoes
    2 egg whites
    salt and pepper
    
    Preheat oven to 425 degrees.
    
    Using non-stick baking sheet, apply the oil to the baking sheet.
    Scrub potatoes thoroughly, and dry thoroughly.
    Slice potatoes lengthwise, and then cut into the desired size of fries.
    In a medium size bowl, use a whisk to beat the egg whites until foamy.
    Toss potatoes in the egg whites.
    Arrange on baking sheet so that they do not touch.
    Bake 30-35 minutes.
    Sprinkle with salt and pepper to taste.
