| I didn't see the show, but have made Rice crust before.
Just cook some rice (amount depends on how thick you want the crust and
how big of a pie plate you're using).
Whisk some egg white and add to rice. Smush the rice against the pie
plate sides and bottom (I'd PAM the pie plate first).
If you don't want to use egg white, use water or milk. You really just
need to moisten the cooked rice so it will stick to the sides of the
plate. You could add shredded cheese to it (my Mom does) or spices.

| How does this rice crust tast? Would it work for a pumpkin pie?
My friend believes her kids are allergic to wheat. While this belief
is almost certainly erroneous, I'd like a workaround for the times when
they come to visit.
Any suggestions for wheat-free crusts?

if wheat allergy does exist, this is not a solution - too close to count...
the rice crust just mentioned is the best alternative to wheat based
pie crusts. If you want a thickener for sauces, fruit pie juices, etc.
that is probably non-allergenic for the majority of the population, use
rice flour, cream of rice, or potato starch - all purchasable at most
health food stores and many supermarkets. Corn starch can cause allergic
reactions in those who are food sensitive. Arrowroot can also be used
if prolonged cooking at simmer or boiling is not required - stove top
applications.
Many folks do have food allergies, and they aren't any fun...it may be
a bit harsh to eliminate this out of hand when a parent says it exists...
it often does exist, and goes undiagnosed for ages before it becomes
truly life-threatening in severity....children with perpetual colds
are often suffering food related allergies which are undiagnosed - and
which can become real dangers due to swollen breathing passages if
undiagnosed.

| The rice crust tasts like... rice. The part that may not be covered by
whatever is going in the pie plate (quiche, etc) might get a little
crispy. You can add cheese or spices or whatever to the rice mixture
before you put it in the pan and that will add more flavor.
