3654.0. "Help! My brownies are wet and guey." by TOOLS::PACKED::PERIQUET (Dennis Periquet) Sat Oct 10 1992 23:57

    Help!

I made brownies using one of those brownie mixes you
buy in the grocery store. It said to mix two eggs, 1/4 cup
of oil, and 2 tablespoons of water; bake at 350 degrees F
    for 28 minutes.

The brownies always seem to come out uncooked (wet and guey)
in the middle. The sides are cooked, but the middle is
always wet. Even when I've added an extra 10 minutes to the
time, they still come out wet in the center.

What am I doing wrong? How do I prevent this from happening.
I haven't had a good batch of brownies in a long time!

As I write, I'm microwaving the brownies. I just opened the
microwave and it doesn't look too pleasing. The center is soft--
    very soft.

Any assistance will be greatly appreciated.

    Thanks in advance!

    Dennis

Have you checked your oven temperature? If it is significantly low
    this would happen.

Have you checked the size of the pan, also are you preheating the oven
before putting the brownies into the oven?

3654.3I think a found part of the problemTOOLS::DENNY::PERIQUETDennis PeriquetMon Oct 12 1992 14:1215

I turn on the oven before I do any mixing to allow ample time for
preheating. Perhaps it needs to be calibrated -- I think I'll go out
and purchase an oven thermometer to see if 350 degrees is what I'm
    really getting.

The size of my pan was a little small but deep; this might be a
    problem.

I also found out that I forgot to put two tablespoons of water -- maybe
    this was a significant factor.

Thanks to all for their advice!

Some brownies are supposed to be a little gooey--baked, yes, but very
    moist in the middle.

If the other suggestions don't help, add another egg to the batter.
You'll end up with "cake-like" brownies.

Also, Canola oil works better than 10W40.

I know, I know, it's been years since I've followed up on this.
    Anyway, ...

I found that my problem was that I was assuming that I had the correct
size pan. Well, I didn't -- I needed to use a 9x13 pan and was using
something small but with the same basic shape. I've change the pan and
the brownies are wonderful. Also, I have a new oven that beeps for me
when it is preheated -- so that problem is gone too.

    Thanks for all the help.
