3650.0. "CANDY: Almond Rocha" by KAOOA::LBEATTIE () Sun Oct 04 1992 19:12
Hi! Does anyone have a recipie for an Almond Cream Pie?
Here's a great recipie for ALMOND ROCHA:
250 ml sliced almonds
50 ml ground almonds
250 ml unsalted butter
325 ml granulated sugar
50 ml water
15 ml white corn syrup
250 ml semisweet chocolate chips
On separate baking pans, spread sliced & ground almonds.
Bake in 400 degrees F oven for 2-3 minutes for ground,
and 3-4 minutes for sliced almonds, or until lightly toasted.
Watch carefully, they burn quickly. Set ground almonds aside:
spread sliced almonds in lightly buttered 13 X 9" pan.
In saucepan, combine butter, sugar, water & corn syrup. Cook,
stirring over med. heat until candy thermometer registers
270-290 degrees. Immediately pour evenly over sliced amonds,
smoothing with back of spoon. Let cool until syrup is firm
but still hot, about 2 minutes.
Sprinkle with chocolate chips; spread smoothly with back
of a dry, metal spoon. Sprinkle with ground almonds. Let
stand or refrigerate until chocolate is firm. Using tip of
knife, break into pieces.
Makes about 750 g
By the way, this is not my recipie!
Enjoy!
