    I have a a receipe which calls for the vegetable "Arugula"  Can
    anyone tell me what "Arugula" is. the photo shows what looks like
    spinich.

    Well, it is similar to kale.  The flavor is more bitter (bitterer?),
    though.  The only recipes I have for it that I can recall use it as a
    salad green, or salad decoration.

    The reciepe is a Curried Tofu receipe from a Weight Watchers Cookbook.
    
    We couldn't figure out what Arugula was so we used spinich.  I tasted
    pretty good.  Now I will have to use the real stuff when I can find it,
    if I can.  Kale could be a good sustitute.

    It is also called Rocket or Roquette on the seed packages... A very
    nice green that taste "nutty" when young and becomes "peppery" as it
    (over) matures. The leaf pattern resembles dandelion. It is sold in
    many large supermarkets such as Super Stop & Shop, or Purity Supreme.
    I ususally do multiple palntings each year... we mix it with sorrel
    (ie sourgrass) and spinach for salads or along with garlic, feta cheese
    for pizza - which is always a winner with guests!
