I was wondering if anyone had the recipe for summer squash, carrot and cheese casserole. I had it at a picnic once and it was delicious. I don't know if anything else is in it, or kind of cheese or what. One of those is was gone in a minute and the picnic was so huge noone knew who made it? (Great picnic though) I did a dir/title=squash, and casserole, and cheese and nothing came up so if anyone's got anything please post it.

Here's one, but there's no cheese in it. Yellow Squash Casserole 6 cups summer squash, cut into chunks 1 cup shredded carrot 1 cup sour cream 1 can cream of chicken soup 1 cup stuffing mix 1 stick butter 1. Parboil the squash about 4-6 minutes, or microwave a few minutes until just tender. Put into a 12x8 casserole dish. 2. Mix shredded carrot, sour cream, and soup (will be thick), and spread over squash. 3. Melt butter and add stuffing mix. 4. Spread stuffing mixture over top of squash mixture. 5. Bake about 40 min. at 350 until bubbly. | |||||

Thank you for the recipe, I made it and loved it. Not being a squash lover, and suddenly inundated with summer squash from my folks' garden I needed a new twist. My husband loved it, and actually SAID so without prompting. I also loved it! Thanks again. | |||||

I also made .1 recipe however, I didn't have any carrots and used cream of celery soup. It was fantastic. A great recipe for children who do not like summer squash. A few adults added melted cheese to the top the next day when we had leftovers, FWIW. Thanks! cj |
