3602.0. "Petits Fours Recipes?" by CSSE::MENEZES () Tue Aug 18 1992 12:36

    I've decided to make some petits fours for a baby shower that I'm
    giving. I thought of having pastel blue, pink, and yellow icing.
    Does anyone have a relatively easy recipe for petits fours? I have
    seen recipes for marzipan covered and jam filled (yummy).

    I'm a little worried about the outcome of the icing.

    I'd appreciate suggestions.

    Thank you.

3602.1Some ideas...AKOCOA::BBAKERTue Aug 18 1992 14:0819
    Are you going to make the ones with filling in the middle or the ones
    with a layer of cake, a layer of mousse-like filling, a layer of cake?
    Or are you just going to do little squares of cake that are frosted and
    decorated?

    At Christmas time, I make a cake (white) in a Jelly Roll pan. I cut out
    a tree shape and frost that. With the left over cake, I cut out
    different size squares and rectangles and cover them with warmed
    frosting. (Warming makes it drizzle-able. Room temp frosting is hard to
    spread on the 'cut' sides of the cake). Usually white frosting. Then
    I decorate them to look like Xmas prezzies, and put under the (cake)
    tree.

    The point is: you could just make a cake and cut it up into squares and
    decorate. You could always carefully cut the cake into layers and put
    jelly or mousse or whatever in between the layers then frost and
    decorate.

    Thanks Beth. I'll probably make cakes with a filling inside. I'm still
    looking for ideas though. Your tree cake sounds lovely for Xmas time!
