3597.0. "RHODE ISLAND PINEAPPLE PISTACHIO DELIGHT" by LEDS::SIMARD (just in time.....) Tue Aug 11 1992 15:15

This is a simple light desert. It can be made low calorie/low fat or you can
not worry about it.

		PINEAPPLE PISTACHIO DELIGHT

		1 can of Crushed Pineapple
		1 package of Jello Pistachio Pudding Mix
		2 Cups of Cool Whip

		Mix all of above VERY well and refridgerate until set

		You don't add milk to the pudding mix, just sprinkle
		the dry mix into the pineapple.

3597.3Instant pudding mix?MCIS5::CORMIERWed Aug 12 1992 09:246
    Instant pudding mix? My assumption is yes, since there is no cooking
    involved, but want to be sure. Sounds delicious! Incidentally, if
    anyone is interested in making it low-fat, I use Dream-Whip with skim
    milk whenever a recipe calls for cool-whip or whipped cream. Same
    consistency, lower calories.

3597.4low call tooLEDS::SIMARDjust in time.....Wed Aug 12 1992 12:0312
    answer to -1 is either instant or cook type.

    A note:

    Low cal can be sugar free Jello pudding mix, no sugar
    pineapple and Lite Cool Whip. You can hardly tell the difference in
    tast.

    I made it again last night, looks like I have another binge food.

3597.5Which size can of pineapple?AIMHI::COREYWed Aug 12 1992 16:317
    Sounds wonderful!!

    Did you use a large can of pineapple or the smaller 6-7 oz. can?

    Thanks. I can't wait to try it!

3597.7lo cal, lo fatRDVAX::BELMOREThu Aug 13 1992 13:026
If you really want to make it lo cal and lo fat, substitute
2 cups of plain yogurt and use diet instant pudding mix.
The yogurt gives it a little different
taste but it's still very good. I used to make it all the
time when I was in Diet Workshop (one cup counts as 1 fruit,
and 1 dairy).
3597.8and a little dab of Rum!LANDO::EBENSMary Jean Ebens - BXB2-2/G06Tue Aug 25 1992 08:497
    Tried this the other night -- very nice -- my diabetic son enjoyed the
    lo-cal, no sugar treat.

    Add 1 Tablespoon of Rum to mask the "mix" taste. This is a good trick
    for a lot of mixes.

    thanks, mj

    Just two days ago a friend made a dessert so similar - pinapple, cool
    whip and lemon jello (not pudding). She also said that making the
    dessert with strawberries, red jello and cool whip was good, too.
