Hi, I've taken a stab at Raspberry Vinegar. Not knowing what I was doing, I bought a bottle from Crate and Barrel, used 1 pint of red wine vinegar and 10 raspberries. The opening of the bottle is a little small, so I had to push the berries through. Looking at it now, it appears that some of the seeds have fallen away from the berries. I've let it sit for 9 days now. I was going to let it sit until this weekend, almost two weeks. So: Did I use too many/ too few raspberries? Am I letting it sit too long/not long enough? Any suggestions on straining it. Will I need to strain it? If I made several batches of it now while raspberries are in season will it last into the fall? Will it be good to give as Christmas presents? Can anyone suggest a salad and dressing using this vinegar? Anything else I should know? Thanks, Stephen

If you want to use fresh raspberries....I use 1lb. of mashed raspberries to 1 pint of wine vinegar (red I think). Steep the ingredients for a week or two, and then strain into bottles. It will keep for as long as any other vinegar. Kim | |||||

Sorry, got it wrong...it should be white wine vinegar. If you want to make the sweet variety, make the vinegar as in the previous note, strain it off, then put it into a saucpan with 1lb. sugar, and heat till the sugar has dissolved. Decant into warmed bottles. Kim |
