3549.0. "FROZEN POPCORN" by CGHUB::GALPIN () Thu Jun 18 1992 12:27

         I searched the notesfile on this, but came up empty. I just
    bought a huge amount of popcorn kernels from a warehouse as the price
    was cheap. The problem I have is that it will last me 1-2 years
    depending on how often I make popcorn. Right now, I have them in
    Tupperware containers. How long will the popcorn remain fresh? Can
    they be frozen in small packages?

3549.1Freezing popcorn worked for meSHARE::RICHARDSONwelcome to our 1st annual bizarreThu Jun 18 1992 13:108
    I used to get my popcorn through a food co-op (translation: in vast
    quantities). I would throw it in the freezer in either a large Zip-loc
    type bag or a large Tupperware container, and when my "kitchen" container
    of it ran out, I just refilled it from the one in the freezer. I never
    noticed any difference in popping or degradation of flavor, and some of
    it was in the freezer for a *lloooonnnngggg* time.

         Thanks for sharing your success with me. Tonight, I will start
    putting them into ziploc bags for freezing.

A trick that I've used with a lot of success when freezing stuff in zip-lock
bags is as follows -
   Run the zip-lock almost completely closed, except for the last 3/4" or so.
Stick the end of a soda straw into the remaining opening and suck the bulk
of the remaining entrapped air out of the bag with the straw. As the bag
collapses on the contents, pull out the straw and complete the seal of the
zip-lock.
   It won't actually create a vacuum, but it'll remove enough of the air
that you'll significantly reduce the freezer burn which results normally
in a package which has entrapped air.

    I had heard once that freezing popcorn resulted in more kernals popped.
    We keep all the microwave popcorn in the freezer. I guess, because I
    buy so much at a time time that I am concerned about the fats going
    rancid, as well as hoping it improves the popping.
