3548.0. "DRESSING: Ginger Salad Dressing" by PCOJCT::LOCOVARE () Thu Jun 18 1992 10:52

Hi! I am looking for a recipe or if it is sold (name & where)
for the Ginger Salad dressing used by Japanese restaurants
(Like Benihana's, Dosanko). I have found a few bottled
ones but its not quite the same... Thanks in advance.

Hi!

I've been looking for this recipe also. I called Benihanas for the recipe, but
wouldn't give it out. However, the hostess said they will sell a bottle of it
for about $5.00. I'm going there tonight for dinner and will let you know on
Monday the quantity and cost.

I'm shocked! When I went to dinner at Benihana's on Friday night they had a
flyer with the Ginger Dressing receipe. (Apparently, the hostess didn't know
this).

So here is the "official" Benihana Salad Dressing

1/4 cup chopped onion
1/4 cup peanut oil
2 T rice wine vinegar
2 T water
1 T chopped fresh ginger root
1 T chopped celery
1 T soy sauce
1 1/2 t tomato paste
1 1/2 t sugar
1 t lemon juice
Dash each salt and pepper

Combine all ingredients in blender container to work bowl of food processor
fitted with steel knife: process until almost smooth. Makes 6 servings, about
2 tablespoons + 2 teaspoons each (unused portions may be stored in a covered
container in the refrigerator).

For those that like the Ginger Sauce you use for dipping the vegetables in...

1/4 cup chopped onion
1 small piece fresh ginger root or 1/8 t ground ginger
1/2 cup soy sauce
1/4 cup rice wine vinegar

Combine all ingredients in blender container and process until smooth. Makes
6 servings, about 2 tablespoons + 1 teaspoon each.
