Looking for an authentic recipe for stuffed (hot cherry) peppers, there stuffed with prociutto, and provolone cheese, which explains itself. I am interested in the juice that there in. <You can buy these in a Italian Market, but would like to create my own. Anyone out there have a grandfather that may know this. Lea morin @shr

Add a few cloves of Garlic to the juice. The longer you let it sit - the better it gets. My husband makes these all the time. We even have parties where we make "hot" peppers to take home. | |||||

I made these over the weekend with low-fat ricotta, some italian spices and prosciutto. Sat them in some Olive Oil and that sort of took a little of the sting out of the pepper. (I took a small bite of a pepper before I stuffed it - it was FAIRLY hot!). I'm going to try the garlic in the juice next time. These are great, tho and I managed to make them lower in fat than I anticipated. beth |
