and other bottled goodies (near the ketsup). Careful, though--this

| I'd never heard of the stuff - but it was used in a Chilli recipe in
note 27 - and I'd love to try it. Anyone know if it's available in
Australia?

| I just bought some of this stuff for the first time this weekend as I had
some odd popcorn recipes which called for it. There's no question, the stuff
_IS_ strong.
I notice that the ingredients list water and smoke concentrate.
Does anyone know how medically safe this stuff is?

Liquid Smoke is exactly what the name says--a concentration in liquid form
of the organic components of hickory smoke.
There's a definite link between stomach cancer and consumption of large
amounts of smoked and grilled food in the diet. Liquid smoke probably thus
isn't particularly good for you in large quantities. Of course, you never
use it in large quantities.
