I made a version of this over the weekend for a pot luck supper.
* 2 heads of broccoli (it was on sale for 2 for $1.00 here)
Micro the stem parts first and then add the flower parts when stems
are almost tender.
* Add a couple of pounds to the broccoli of small red potatoes, micro
till almost tender first.
* 1 can "Cream of Broccoli" Soup (Campbels) mixed with 1 can
evaporated milk.
* Pour soup/milk mixture over broccoli and potatoes, (I used a foil
lasagna size pan),
* Cover with 1/2 pound of grated swiss cheese
* Bake at 350, covered with foil
* When almost finished, cover with buttered bread crumb and put
back to brown without foil. I increased oven temp to 450 for this part.
This was a nice dish that stayed hot enough for a long time.
The left overs were mixed with pieces of chicken breast that had been
cooked up and served as a complete meal.
Not bad! Husband said he liked it and I would do it again for a pot
luck. I also would do a small version for just the two of us.

| I know this note hasn't been used in a long, long time, but I am hoping
someone will look here in the near future and, perhaps, be able to give
me some help. I am looking for a recipe that I had and lost for a
broccoli casserole that was really good. All I can remember about it
is that it called for a can of Cream of Potato soup and also had some
cheese in it, I think. I appreciate any help any one of you good cooks
can give me.

Here's a recipe for broccoli casserole, it doesn't have cream of potato
but it is really delicious! It's kind of sketchy because I don't use
the recipe card anymore, I have made it so many times.
1 egg
2/3 c. mayonnaise
1 can cream of mushroom soup
2 boxes frozen, chopped broccoli, thawed and drained
Or a mix of broc and cauliflower is good too.
1 cup shredded swiss cheese
bread crumbs
butter
whisk the egg and mayo together and then whisk in the soup. stir in
the cheese and broccoli. Pour mixture into 13x9 inch pan. Melt some
butter and mix with bread crumbs. Cover casserole with bread crumbs.
Cook at 350 or so for about half an hour or until hot and bubbly.

| I had a really good recipe for a broccoli casserole that I lost. All I
can remember was that it had cream of potato soup and cheese in it.
Does this sound familiar to anyone out there. I also posted this in a
broccoli note. Thanks for any help.
