3519.0. "Ham revisited" by BSS::K_LAFFIN () Tue Apr 21 1992 12:28

I did a dir/title=ham and found a note asking about "ham bone soup".
That note directed the author to another note which has been deleted.
    (gasp)

I have a huge ham bone with some meat still hanging off it and I would
like the recipe for this particular soup. If anyone has it I would
    sure appreciate it.

    Thanks,

    Katrina

The best "Ham bone soup" I know is "Pea Soup" I also have a nice bone
with lots of meat on it, and will be making a soup this week. It's real
easy to do, there is a recipe on the pkg. of split peas you buy in the
store, but I just soak the peas, drain and add the bone, a carrot or
two chopped fine, a med onion chopped fine, cover with water and heat
to a boil, then cut the heat to a simmer. After an hour or so, I remove
the bone, and take the meat off the bone to add it back into the soup.
I always season when the soup is almost done, but do add a few bay
    leaves at the start.

A nice variation is to make a puree of mongol by adding a can of
tomato soup to the pea soup.

    Enjoy!

no problem. Use any mixture of dried beans - white, red, black, pinto,
speckled, etc. Soak the beans overnight in water to cover. Drain, and
cover with approx. 2 inches of water. Add ham bone and bring to a simmer
while chopping up a few stalks of celery, 3 carrots, and an onion or two.
Add to the pot, cover loosely, and simmer until beans are tender - maybe
an hour and 1/2. Remove bone and take meat off to return to pot. Cook
down until of desired consistency without lid. Season with salt and pepper.
Eat. With buttermilk cornbread. Great stuff.

Recipes are on most pkgs of dried beans you get in the store.

    RE: "note ... deleted"

    Not really.

Note 2845 "ham bone soup" has a pointer to note 432 which
was on "ham leftovers" and had a reply on "ham chowder"
    "Ham chowder" moved to 18.35.

Katrina I also hate pea soup, but like peas. I don't understand it.
I make the white bean soup (navy beans) that is given on the Goya
white dried bean package and like it mucho. We're having left overs
tonight and I plan on making the soup this weekend with the remaining
    meat and bone.
